Banana Muffins

If you have overripe bananas, you can turn them into a sweet, moist banana muffin and best of all it takes hardly anytime to make!

Preparation

Cooking time: Approximately 25 minutes

Preparation time: 15 minutes

Makes: 12 Large Muffins or 24 Small Muffins

Ingredients

  • 4 large bananas
  • 3/4 cup brown or white sugar
  • 1 slightly beaten egg
  • 1/3 cup melted butter
  • 2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups flour

Method

  1. Preheat oven to 180°C (350°F)
  2. Mash the bananas in a bowl, and then add the sugar, eggs and melted butter and combine.
  3. In another bowl add the baking soda, baking powder, salt and flour and mix.
  4. Mix both wet and dry ingredients just until they are combined.
  5. Grease your muffin tin and evenly separate the mixture.
  6. Bake them for approximately 25 minutes.

    Try adding some crushed walnuts, really goes well with this recipe.
